Banana bread

Ingredients

self raising flour
1 egg
1 ripe banana

During the "time of Covid", people cooked banana bread during lockdown, for some reason. I finally gave in and had a go myself. But I used half the amount, which made a perfectly good cake.

Cooking process

Measure out the butter and sugar and . Then beat in the banana, then the egg, then the .
Line the baking tin with baking paper (this is optional, but makes it a lot easier to get the cake out afterwards). into the tin, levelling it off.
Put the tin in the oven. This needs to cook for about 45 minutes. Test the cake by putting in a skewer and see if it comes out clean. But don't look at the cake too early. Opening the oven door reduces the over temperature, and that can make the cake collapse.
Turn the cake out from the tin and let it cool.

Other ideas

I added some cinnamon, which went well. Another recipe mentioned vanilla. Yet another put icing and babana chips on top.
