Burnt Basque Cheesecake

Basque cheesecake

I had a Basque Cheesecake in a restaurant, and thought it tasted nice, so looked up a recipe. This definitely worked well!

Ingredients
mascarpone
sour cream
sugar
1 egg
1 tablespoon plain flour
1 tsp vanilla

Equipment

bowl
mixer
small cake tin
baking paper

oven:
time in oven: 30 mins, plus time in the fridge to cool

preparation time:
mix together

Beat mascapone and sugar together, then all rest of ingredients and beat again.
Line small cake tin with baking paper, and fill with mix.
Put the tin in the oven. The oven temperature is astonishingly high! I'm not sure if my oven goes that high, but I put it as high as I could. This did char the baking paper considerably, but it didn't actually catch fire...
It rises in the oven, then sinks as it cools. It's supposed to look brown!
Don't mess about with it until it cools. It sets OK, but it's quite fragile when it's just out of the oven.

This is very nice, and easy to make. It is cooked at a very high temperature to camelise it, which gives a distinctive taste.
The original recipe said soft cheese, but the supermarket didn't have any, so I used mascarpone.
When you line the cake tin with the paper, don't be worried about creases. It makes the end result look more rustic.
The sour cream, the vanilla and caramelisation gives the taste. And it sets well (as long as you wait until it's cool)..
Nice with fruit, such as orange.
