Dutch Hare

This is a recipe from my mother. I don't know the origin of the name!

Ingredients
mince per person
breadcrumbs moistened with strong stock
small onion
mushroom
an egg
mixed spice
bacon

Equipment
knife and board for chopping
bowl
baking tray

oven:
time in oven: 1 hour

preparation time:
mixing ingredients

Mix the mince, the breadcrumbs and the stock.
Peel and chop the and add to mix.
Chop mushroom and add to mix.
Add the spice. Add the egg and mix well together. Put onto the tray and form into a loaf shape.
Cook in the overn for an hour.

This is the original recipe from my mother. It used to be that the British couldn't imagine a mince meatloaf without breadcrumbs and egg. And a chopped onion. I enjoy the crispy bacon on top, but I do find that and the stock makes the whole thing rather salty. Perhaps ditch the stock, or replace it with some other liquid such as cooking sherry or wine.
I don't tend to follow the amounts closely either. It depends how much meat there is, or whether I remembered to buy mushrooms! And I've used allspice rather than mixed spice.
This is just meat, so you will need some veg with it.
