Elderflower drink

Elder is a common wild tree in Britain, with white flowers. Here is a drink flavoured with them.

Ingredients
sugar
elderflowers with stalks trimmed
2 pints of water
1 lemon

Equipment
saucepan
bowl
sieve
2 bottles with secure tops
funnel

preparation time:
mix ingredients
steep for 24-48 hours
keep for 6 days before drinking

Put the sugar in half of the water, and heat until dissolved.
Add the rest of the water to cool it. Add the elderflower heads and sliced lemon.
Leave to stand for 24-48 hours.
Strain into bottles and put tops on. This should be fizzy, so make sure the tops are secure. Ready to serve after six days.

I adapted this from a recipe for 3 times the amount. That used a little white wine vinegar.
