small bottle of wine

rolls / bread

peel, slice and fry onions
Cooking process
Peel and slice onions. Fry them in butter until transparent. Turn down heat and carry on cooking them until soft and caramelised (20-30 mins). Stir regularly to prevent sticking.
Add flour and stir to blend. Add wine. Carry on cooking for 15 mins.
Meanwhile, toast rolls / bread slightly. Put grated cheese on top. Grill until brown. Add to top of soup.

The original recipe suggested adding a bit of sugar. But what I liked about this recipe was that it was very stripped down - no stock or other added ingredient.
The original recipe said white wine, but also said red wine could be used in onion soup. So I did. The "small bottle" is the type you can buy in supermarkets which does one glass. The original recipe said a lot more water (and less wine). Maybe so - it tasted quite strongly of wine. On the other hand, the onions didn't come through that strongly, and I wanted it to taste of something!
