Ingredients
parsnip per person oil or fat |

peeler saucepan pan baking tin |
oven: time in oven: 30-60 mins (see description) preparation time: peel parsnip boil parsnip 5 mins |
Wash parsnips if necessary (I grow them!). Peel them. Cut into pieces of roughly the same size. This may mean cutting some bits of root in half, and some in quarters or sixths.
Boil for 5 mins and drain off water.
Heat up fat or oil in the baking tin in oven for a bit.
Put the parsnips in the fat in the baking tin in as single layer. Cook for 20 mins. Turn over. Cook other side. Cooking time will depend on size (I presume - I burnt some of mine!)
My main problem with roast parsnips is when I think they are roast potatoes, and then they taste very odd (for potatoes). Tell yourself, plus anyone else, firmly, that they are parsnips, and they taste much better.
