Welsh Rabbit

This cheese dish was called Welsh Rabbit as a joke. After a while, people not understanding the joke decided it should be Welsh Rarebit instead (as it doesn't contaon rabbit - sigh!) It's not particularly Welsh, either.

Ingredients per person
Grated cheese
Butter
Toast
Flavouring

make toast, melt cheese

Cooking process

Make the toast.
Melt a little butter in a saucepan, and add grated cheese, plus any flavouring. Heat, stirring, until the cheese is just melted. Do not over-cook!
Pour onto the toast.

Extra ideas

You can add various flavourings. Mustard is good. So is Worchestershire sauce, but that isn't vegetarian. A little beer is good as well, but it does make the Welsh Rabbit too liquid, so it runs off the toast (but is still very nice!)
I cut up the toast into bits so it can be eaten without a knice and fork.
Sliced tomato on top looks attractive, and adds to the taste, and nutrition.
