Measuring ingredients

Americans tend to use cups in their measurement. The Europeans use metric weights. The British are supposed to use metric weights, but in fact still tend to use the old fashioned Imperial weights. All my recipes are in pounds and ounces, and the other units are conversions, and so, approximations (sorry!)

There are 16 ounces to a pound (weight). There are 14 pounds to a stone, but you're unlikely to need that! There are 1000 gms to a kilogram.



Conversion between Imperial and metric


One pound (weight) is 450 gms (approx). One kilo is 2.2 pounds or 2 pounds 3 oz (approx).

American cup / weight conversions

It should be noted that cups measure by volume, and volume and weight are not the same thing. The table below shows the variation for different ingredients.

I copied the above from my (rather ancient) copy of the Good Housekeeping Encyclopaedia - I hope it's accurate! It's not going to be easy to reverse, as recipes in cups tend to be in whole or half cups. The following tries to give the approximate cup conversion for one pound (weight) or 450 gms.

Spoons

This is according to a set of measuring spoons that I have. My experience is that real spoons vary considerably in size!

This means that an American cup is 23 dessert spoons or 16 table spoons. Use the conversion tables above to wrestle that into a weight!
