Yorkshire Pudding

Yorkshire Pudding are traditionally eaten with roast beef, although my mother used to serve them with golden syrup as a real pudding.

Yorkshire pudding can be cooked as one lump in a tray, or in individual items. The photo above shows individual puddings. Put a little oil in the tray, and put in the hot oven to warm up a bit.
Weigh the into the bowl. Break the egg in as well. Stir it all a bit with the fork. Add the milk slowly, stirring with the fork. This is a very runny mixture called a batter.
You can beat the mixture if you wish, or some people leave it in the fridge for a while to get rid of the flour lumps. I find it easiest to sieve the mixture, then rub the lumps through the sieve. You can certainly prepare the mixture beforehand and leave it in the fridge until you need it.
Take the hot tray out of the oven, pour in the batter, and replace it. Thr recipe I followed called for a hotter oven than I've given, but I tried it at this temperature, at the top of the overn, and they burnt slightly!

There are different recipes for Yorkshire pudding. They contain flour, eggs and milk, but vary the amounts. The basic recipe is te same as the pancake recipe. This version is richer, with more egg. I have made an even richer version, with one egg, one oz of flour (as opposed to two) and two oz of milk (as opposed to four) - that is - twice as much egg. It still worked. That amount of mix produced 4 Yorshire puddings, with 2 tablepsoons of mix per individual dish. I also looked at them after 15 mins, and turned them upside down, which helped the cooking.
The recipe I followed also said that you must put the batter into a hot tray (as I have described) plus once they are cooking, you mustn't open the oven door. So you can't see if they are burning... My Yorkshire puddings always seem a little doughy when cooked - I'm not quite sure why. But these rose well, and were hollow inside, for the gravy!
